### Responsibilities
- Cut and weigh fish fillets according to specifications
- Clean and trim fish or seafood before further processing
- Inspect fish fillets to determine the optimal number and size of fillets
- Unload fish and shellfish from vessels and transport them to the work area
- Use a forklift to transport unloaded fish and shellfish
- Scrape away scales, cut fish, separate fillets, and remove scrap parts using knives
- Condition fish fillets for wrapping or freezing
- Check products and packaging for defects and make machine adjustments if needed
- Disjoint and remove meat from lobsters or other crustaceans for processing
- Record production information
- Operate machines for canning, bagging, or packaging seafood
- Weigh fish or shellfish, record weights, and pack fish in ice
- Clean machines and work areas
- Measure and dump ingredients into machines
- Sort fish according to species, weight, and destination
- Manually pack goods into bags, boxes, or containers
- Transport raw materials and finished products manually
